This super fresh salmon dish is a summer favourite at FRATELLI and can be whipped up within 20 minutes at home; a perfect healthy weeknight meal!

Cook time: 10 minutes
Ingredients:
– 2 tbsp lemon infused extra virgin olive oil
– 4 (120g) salmon fillets, skin-on
– 1 cup flat-leaf parsley leaves
– 500g cherry tomatoes
– 2 spring onions, thinly sliced
– 1 small red capsicum, chopped
– 400g feta, cubed
– Tuscan seasoning
– Freshly Ground Black Pepper
Now to the fun part:
– Heat a large non-stick frying pan over medium-high heat
– Drizzle half the oil over the skin of the salmon
– Cook Salmon, skin-side down, for 3-4 minutes
– Turn and cook for a further 3 minutes for medium or until cooked to your liking, then season
– Combine parsley, tomato, spring onion, capsicum, feta and seasonings in a bowl
– Drizzle with remaining oil then season
– Serve salmon with salad
