Serves: 10 – 12
Prep time: 2 hours
Ingredients:
– 1/4 cup of extra virgin olive oil
– 1 large onion, finely chopped
– 1 small carrot, finely chopped
– 3 cloves of garlic, chopped
– 1 cup flat-leaf parsley, finely chopped
– 1/2 small dried or fresh red chilli optional)
– 500g minced beef or veal
– 500g minced pork
– 1 tbsp tomato paste
– 4 x 750ml bottle of Salsa di pomodori
– Salt
– Freshly Ground Black Pepper
– 1 handful of basil leaves
Now to the fun part:
– Heat olive oil in large saucepan over low heat
– Add onion, carrot & garlic
– Fry for 3-4 minutes until onion is clear and carrot soft
– Add the parsley and chilli to the pan
– Cook for 30 seconds and be careful not to burn
– Add the minced meat to the pan & break up with a wooden spoon, stiring occasionally for 5-6 minutes or until it has browned and excess liquid has evaporated
– Stir tomato paste into meat
– Let fry for 2 minutes
– Add the Salsa one bottle at a time, stiring to ensure it is well combined with the meat
– Season with salt and pepper & stir through
– Place lid on the saucepan slightly to the side, to allow steam to escape
– Cook on Low heat for at least 2 hours
– Serve with cooked spaghetti or tagliatelle for the perfect meal
The best part is, you’ll always have leftovers for lunch the next day
