The perfect Mother’s Day inspired dish
Surprise your mum with just how much thought and effort you put into this years Mother’s Day celebration, with a delicious homemade Italian baked cheesecake

Ingredients:
Pastry-
– 170g (1.5 cups) plain white flour
– 2 tbsp caster sugar
– 120g (1.5 cups) chilled butter
– 1 egg yolk
Filling –
– 400g (2 cups) ricotta cheese
– 100ml (0.5 cup) double cream
– 2 eggs, seperated
– 1 egg yolk
– 4 tbsp caster sugar
– rind of 1 lemon, finely grated
– rind of 1 orange, finely grated
Now to the fun part:
Pastry Case –
– preheat oven to 190 degrees, gas mark 5
– put the flour in a mixing bowl
– cut the butter into small cubes; add to the flour & “rub in” until the mixture resembles fine breadcrumbs’
– stir in the sugar and lemon rind
– (if you have the time, wrap the dough in cling film and leave in the refrigerator for 20 minutes whilst you make the filling, this will make it easier to handle when you are rolling it out.
– once chilled (or not), roll out and place in a greased 25cm flan dish
– prick the pastry all over with a fork, this will stop the bubbling – bake for 7-10 minutes, until golden.
– remove from oven and set aside until filling is ready
– Once the pastry is cooked, turn the oven tempreture down to 150 dgrees, gas mark 2.
Cheesecake filling –
– drain ricotta by placing in a sieve
– once drained, put into a mixing bowl and add the caster sugar, orange and lemon rind, cream and egg yolks (set the whites aside for use later)
– beat together using either a hand whisk or an electric hand whisk
– in a seperate bowl, place all egg whites and whisk until they form soft peaks
– add the egg white to the cheese mixture a little at a time, folding gently,
– spoon the filling into the prepared pastry case
– bake for approx 45 – 45 minutes – when cooked the filling will be golden brown and firm
– turn oven off, leave the door open and allow the cheesecake to cool down in the oven
– to make it look extra special, decorate with whichever fruits are in season, berries look particularly good!
