Winter is here and so is our amazing tortellini soup recipe

Serves: 6
Cooking time: 25 minutes
Prep time: 10 minutes
Ingredients:
– 1/2 medium onion (chopped)
– 1 tbsp olive oil
– 1 tbsp butter
– 1 clove garlic (minced)
– 2 tbsp flour
– 2 cups chicken broth (or vegetable broth)
– 1 can diced tomato (w juices)
– 2 dash italian seasoning
– 1 tbsp brown sugar
– 1 cup whipping cream
– 2 cups cheese tortellini
– salt & pepper (to taste)
– 1 tbsp fresh basil
– freshly grated parmesan (optional)
Now to the fun part:
– Add olive oil and butter to a soup pot over medium-high heat
– Once the butter has melted, add onion & saute for 5-7 minutes
– Stir in garlic and flour, cook for approx 1 minute
– Stir (or whisk) in broth until flour has dissolved
– Add canned tomatoes, italian seasoning, sugar and cream to the pot
– Once the soup is boiling, add the tortellini and reduce the heat to a simmer
– Leave to cook for 8 minutes
– Season with sald & pepper and needed
– If using fresh basil, add in only a few minutes prior to serving
– Serve soup with freshly grated parmesan over top if desired
